Paleo-Casual Eatery Just BE Kitchen Replaces Mona's
Just Be Kitchen[1], a paleo-forward eatery from chef Carrie Baird, formerly of Brazen[2], and founder/operator Jennifer Peters will open at 2364 15th Street. The space previously housed Mona's for twelve years until the breakfast and lunch eatery called it quits at the end of the summer[3]. The new tenant will also be open breakfast and lunch with possible dinner coming down the road.
The mission of Just BE Kitchen is well thought-out: "To serve mindful mouthfuls from a conscious kitchen with kindness on a plate." Baird and Peters are committed to being the first 100% gluten, grain, and refined sugar-free (also known as Paleo!) fast-casual concept. Somewhere at the intersection of healthy eating and well-being, the goal of the new business is to bring guests healthier menu options and challenge the boundaries of existing fast-casual eateries.
The cheeky menu is designed around different states of being. Breakfast is "Just BE Awakened" for example and main courses are "Just BE Satisfied". Or, you can "Just BE Naughty" when it comes to desserts. To fully commit to gluten-free eating, Baird plans to take her menu beyond traditional soups, salads, pizzas, and sandwiches and offer fulfilling and comforting dishes that make the body and soul feel great.
If all goes according to plan, Just BE Kitcken will open in early March.
